Cecile's Baking Recipes

Our Program Manager Cecile is a baking star, when she’s not at Propel helping out young creatives, she’s baking all sorts of treats for friends and family, and her baking business Ari Gâteau Cakes. With the important recommendation for everyone to practice social distancing and to #StayAtHome, Cecile’s sharing 4 easy baking recipes to try out. Being at home is the perfect opportunity to learn new skills or unwind, and what’s a better way than learning how to bake sweet treats? Learn how to make Cecile’s vegan banana bread, muffins, ginger cookies (!!) and gooey brownies!

10/10 Vegan Banana Bread  

4 Tbsp apple sauce  

¾ Cup canola oil 

1/3 Cup coconut yoghurt or plant based milk 

¾ Cup white sugar  

¼ Cup brown sugar  

2 Cup self-raising flour / whole wheat self-raising flour  

4 ripe mashed bananas 

Pinch salt  

_________________ 

[If you don’t have self-raising flour] 

3 Cup plain flour  

1.5 tsp baking soda 

1.5 tsp baking powder 

___________________ 

1. Preheat oven at 160 degrees fan forced. 

2. Mix all ingredients together in a bowl and pour into a bread tin, make sure tin is lined with baking paper.

3. Bake in the oven for 55 mins.


Sweet Muffins 

620g plain flour 

1 ½ Cup sugar  

25g baking powder  

1 tsp vanilla 

150g melted butter  

3 eggs 

Milk to bind together.

Oven on at 180 degrees

  1. Chuck all ingredients in a bowl mix well and add milk one tablespoon at a time until the mix is nicely combined, might only need 2 tbsp really.  

  2. You can add in anything you like! Blueberries, white choc & raspberry, nuts, yoghurt, choc chips.  

  3. Fill large patty pans with batter 2/3 of the way up. 

  4. Bake for 20 – 30 mins.  


 

Ginger Cookies 

An oldie but a goodie!  

2 ½ Cup self-raising flour

1 tsp baking soda  

Pinch salt  

1 tbsp ground ginger  

¾ Cup sugar  

125g butter  

¼ Cup golden syrup or maple syrup  

1 egg

  1. Preheat oven to 160 degrees. 

  2. Sift flour, ginger and baking soda into a bowl, then mix in sugar. 

  3. Melt butter and golden syrup together in a microwave. 

  4. Combine butter and dry mix together, and then add the egg to create a stiff dough. 

  5. Roll dough into equal sized balls and put into a baking tray. 

  6. Bake for 10 -15 minutes until lightly golden. 


The Best Gooey Brownie Recipe Cecile has ever discovered 

*Yes, it is mostly eggs and chocolate!  

330g butter  

400g dark chocolate  

6 whole eggs 

4 egg yolks  

1 tsp vanilla essence 

330g brown sugar 

 4 Tbsp plain flour 

2 Tbsp cocoa powder  

Pinch salt

1. Pre heat oven to 160 degrees.  

2. Melt together butter and chocolate in a microwave and set aside. 

3. Whisk eggs and vanilla using an electric whisk. When it is very light and fluffy, continue whisking and start to slowly spoon in brown sugar, one tablespoon at a time. 

4. Sift dry ingredients over the fluffy egg mix, using a spatula fold together gently. Continue folding and slowly pour the melted chocolate and butter into the mix. (helps to have someone else pouring it in while you mix) * Note the mixing process needs to be gentle the whole time, we don’t want all the air in the fluffy eggs to deflate. 

5. Pour mix into a brownie tray or any other baking tray, make sure to line the try with baking paper.   

6. Bake for 40 - 50 minutes, the batter shouldn’t be jiggly, and the top will have an amazing crunchy and cracked crust.   

Bonus! 

You can scatter over the top of the batter whatever you want my faves are: 

  • Crushed Oreo and some peanut butter   

  • Raspberries *YUM 

  • Salted caramel   

  • White chocolate chips
